One Day Rest in Seven Law - New York

My husband is the exective chef at an off premise catering company. There is no set schedule and he's expected to be available to work 24/7 besides vacation time. Does the "One Day Rest in Seven Law" apply to him? I know it does for restaurant workers. If so, does the day off have to be the same each week?
