Downsizing/Reorganizing

Hey gang
Our little company is not doing very well and I have to "restructure" some positions.
We are in Delaware, pediatric healthcare, less than 75 employees.
I have a CNA, who was hired in 1998, who took on the Kitchenaide/Cook position in 2009, 3 days in the kitchen and 2 days CNA work.
She was in a car accident later in 2009, and could not work as a CNA, but was able to still be in the kitchen. Recently, I have found out that she is only on the floor 1 x a month. And since the company is not doing well, I can no longer afford to keep a cook at her rate of pay (currently $19.80).
We have decided to cut her hours from 40 to 37.5, and when she does cook duties, she'll make around 10.00, and when she has CNA duties, she'll make $15.50. She wants us to lay someone else off, so she can go back to CNA duties full-time and hire someone else to do the kitchen.
Not to be such a hard a**, but my feeling is if she can't accept the changes, then she resigns. What do you guys think?

I don't what it is, but something makes me a little nervous about this.
You have to admit, that is a lot of change for a long time employee. .
If you were paying her $19.80 an hour then, why wouldn't she at least be making $19.80 an hour for those CNA stints now? What kind of pay cuts are your other CNAs taking?
