Old vs. New

Good am Forum!
One of our departments had a change in employment categories and a senior employee (with the company 14 years) did not like the changes, and resigned, giving 5 weeks notice. I begged him to reconsider and he stood firm.
In the interim, we have hired another employee to take his place and we were planning to have him begin to train on Monday.
Now, today, I receive information that the senior employee wants to rescind his resignation, due to he cant find other employment.
Do I tell the new guy that we have to rescind his offer of employment or let the old guy go?
Any suggestions would be awesome!

As far as unemployment purposes, I think that it would be considered a voluntary quit.
