This past weekend at a Carne Espito fundraiser, someone brought potato salad with crumbled blue cheese mixed in. I love blue cheese, but this was nasty - avoid at all cost.
Yes, some things were just never meant to be mixed or even experimented with. I had the misfortune of trying something the other day for lunch from Publix called Spanish Stir-Fry or something to that effect.
It was the most vile mixture of otherwise wonderful ingredients I have ever tasted. Trust me, it was bad. This is coming from someone who will eat just about anything.
I was just saying this very thing at lunch Saturday. I like onions (raw or cooked) and I like 'tater salad' but I can't stand onions in tater salad. To me it ruins it.
Anywhere in Lancaster County and also in parts of Dauphin, York and even Berks. Lancaster County for sure though. Spring Glen (the company that makes it) is in Ephrata.
Cooked and cubed russet potatoes hard boiled egges-diced Red onions-diced Celery-diced Cheddar cheese-diced Salt and pepper Best Foods or Hellman's mayonaise
Combine the onions, celery, cheddar cheese, salt and pepper together, let set for awhile so flavors meld together. Peel (or not) your potatoes cut and add to vegies, mix in mayo and more salt and pepper to taste.
I don't know if anyone is still following this thread, but try this: after you've peeled the cooked potatoes and chopped them up, sprinkle liberally with Zesty Italian salad dressing (the oil and vinegar type, not creamy). Let it sit awhile so the potatoes soak up the dressing then proceed with all your other favorite ingredients (use a little less salt). The Italian dressing gives a wonderful aroma to the cooked potatoes, and a great flavor.
