Are any of you doing the South Beach Diet? I would love to hear your SB versions of classic dishes or any other culinary delights that you have developed to adheare to this diet.

Sorry Mentel, my heritage is Mexican-Italian and we consider it a cardinal sin to bastardize any dish by trying to make it SB friendly.

Truth of the matter, I have tried. The tortillas and pasta keep getting in the way though.
