Hamburger Casserole

This is a recipe that my husband's grandmother passed to his mother and she passed to me. I guess it will go to my daughter-in-law some day. It sounds really simple, but I have made my husband and several of his friends really happy by cooking this for them.

1 lb. lean ground beef (ground turkey or chicken works too & less greasy)
6-8 potatoes
2 cans Campbells tomato soup
Velveta cheese

Peel and slice the potatoes thin in the bottom of a casserole dish. Cover the bottom to about 2 inches thick. Sprinkle the raw gound meat over the potatoes. Mix the tomato soup with about 1/4 - 1/2 can of water to rinse the cans out. Pour this over the meat. Cover with aluminum foil and bake on 400 for 1 1/2 hours (may not take as long in your oven - mine is slow). Stir every 30 minutes to make sure it doesn't stick to the bottom. When the potatoes are soft, the meat should be done too. Add a layer of velveta cheese and stir it into the casserole. Then, add another layer of velveta cheese to the top.

Great served with green beans and crescent rolls.
