How long to maintain employee records

How long do you need to keep files on former employees? Our old records have finally exceded our storage capacity, and we are preparing to send them to an off-site retention company. I'd like to purge whatever we don't need to keep. I know that some records have to be kept for seven years and some have to be kept forever, but I'm not sure what's what. Can someone please send me in the right direction for a list? Thanks much.
