Non-exempt Pay For Special Duties

We have an employee that is one of our fitness center employees. He also wants to coach our handicapped basketball team as an additional duty. We plan to pay him a lump sum quarterly for coaching the team and his hourly rate for his fitness center hours. The quarterly lump sum is because of the variability of the hours associated with the coaching. Am interested in any potential FLSA potholes with this pay method. Thanks.
