I live in Memphis and just noticed a posting on our local SHRM website. The job is with a large, southern baptist church and one of the requirements states "must be an active member of a southern baptist church." Now, I know churches are exempt from certain rules, but this place is massive and has more employees that most companies. Can they do that?

Yes, religious corporations, associations, educational institutions or societies can require their ee's to be of their faith if the work they perform is connected with their religious activities. Exempton for religious entities was granted under Title VII Section 702 of the Civil Rights Act.

It would still qualify. They are paying the pastor, youth minister, music director, etc.

Joannie is right. Same as with religious oriented schools, they can apply a religious affiliation test to the hiring requirements.
