Pre-employment test for a designer

We are in the process of hiring a new position to our company and would like to have the two candidates we've narrowed it down to work on a project for us.

Any advice on how to do this to ensure that the design remains our property? We are willing to pay them for doing this. One of the final two is a freelancer so would be in a better position to do this type of project as we would contract it out like he would with his other customers.

Stick a provision in the written agreement that all work product is company product.
