If an employer gives its employees an "incentive gift" for no absences during a specified length of time, can they withhold this gift if the employee uses some FMLA days during this specified length of time?

If it's based strictly on attendance, like a Perfect Attendance award, they CANNOT withhold it from individuals who missed work under FMLA.
