Race of Applicants?

Those of you who are required to have an AAP plan.... how do you keep track of the "race" of applicants when all you have is their application or resume (not interviewed.) I have been told we should just "guess" to the best of our ability but wondering if anyone else has a better idea.

The Race codes are
Black-A person having origins in any of the black racial groups of Africa.
Asian-A person having origins in any of the original peoples of the Far East, Southeast Asia, the Indian sub continent.
Native Hawiian/Pacific Islander-A person having origins in any of the original peoples of Hawaii or the Pacific Islands.
Native American/Alaskan-A person having origins in any of the original people of North America, and who maintains cultural identification through tribal affiliation or community recognition.
Hispanic-White-A person of Mexican, Puerto Rican, Cuban, Central or South American or other Spanish culture.
Hispanic-All other races-A person of Mexican, Puerto Rican, Cuban, Central or South American or other Spanish culture and a race other than white.
White-A person having origins in any of the original people of Europe, North Africa or the Middle East.

also-if the person does self identify, you must use the classification that they use, because that is what they consider themselves to be.
