We are laying off an IT person who has password authorization to all servers and wonder how we can prevent any possible sabotage. Any ideas?

Your IT Manager should have list of all his/her employees' passwords and log-ons. Once the person has been notified of his termination, the IT Manager should reset all of those passwords while the employee is going through the exit process with HR.
