Brushetta Chicken

1 1/2 lbs boneless skinless chicken breast cut in bite size pieces.
1 pkg of chicken flavored Stove Top Stuffing
1 cup finely shredded mozarrella cheese
2 tbs dried basil leaves
1 14.5oz can diced tomatoes with liquid
1/2 cup chicken stock
2 cloves garlic minced
salt and peper to taste
Italian seasoning to taste
Pheheat oven at 400
Mix tomatoes w/ liquid, stuffing mix, chicken stock, garlic in a bowl until mixture is moist let stand 10 minutes.
Put cut chicken in a 9 x 13 baking pan(can use olive oil to coat- not necessary though)season with salt, pepper & Italian seasoning then
layer with cheese and basil leaves top with the stuffing mixture. Bake in oven for approx. 40 minutes or until chicken is done.
Serves 6 to 8

Yep, that's bruschetta, yummy bread (not on Atkins!). I was trying to figure out where the "bruschetta" part came into this recipe..Anyone care to enlighten me?

Yes you put the packet in but you may be able to lower the salt if you could find Low sodium Stove Top and it is the chicken flavor OR omit salt to taste.
I have found that if you cover the first 20 minutes then uncover the last 20 it is still crusty but not blackened.
I am always experimenting with this recipe everytime I make it. But it is SOOOOO GOOD & EASY.
